This pistachio nutty semolina cake is not only fluffy, healthy and easy, but full of protein, b vitamins and high potassium comes from pistachio. The semolina flour increase the level of fullness which makes you full for a longer period and regulates blood sugar.
Try it with this simple receipe, it is not very sugary as we always do in special occasions in me home country. This version tends to be way lighter with crunchy texture🤤🍽❤
For the cake
*11/2 C of semolina flour
*2 tsp of baking powder+ 1/2 tsp of baking soda
*1/2 tsp of salt
* 1 C of pistachio chopped in the processor ( 1/2 for the cake + 1/2 for the topping)
*2 medium eggs
*1/2 cup of brown sugar or any sweetener
* 1/3 C of unsalted butter
* 2 tbsp of heavy cream low fat preferable
* 1/3 C of skimmed milk
* 1 tsp of vanilla extract
*Whisk 1 C of whipping cream lite+ 1/2 tsp of vanilla + 1 tbsp of heavy cream low fat +2 tbsp of skimmed milk( for sweeter taste add condensed milk) +the other 1/2 C of copped pistachio.
1. For the cake add your butter with sugar and whisk for 3-4 minutes then add your vanilla and eggs and whisk again.
2. Add cream and milk, and whisk again your batter until its well combined.
3. Add flour, baking soda, baking powder and salt. Move the batter with spatula for one minute not more. Finally add your pistachio (1/2C) and mix it well. Add your batter to a rectangle or square shape dish sprayed by butter for 30 minutes in preheated oven at 180 C for first 20 minutes then lower to 170 C for the rest until your cake gets the gold3n color.
4. For the topping whisk the whipping cream until its thick, then add all other ingredients and keep refrigerated until you get the cake out. Add have of the topping on the cake when its warm and them other half when it gets cooler. Enjoy😁
