Our whole milk ( white cap) is full fat the way the cow provides it for us. It is not standardized into 3.25% milk fat like homo milk. To standardize milk it needs to be separated first into skim milk and cream. Then cream gets added back to the skim milk to get exactly 3.25% milk fat milk. On average Holstein cows give about 4% milk fat milk. Our milk comes straight from the cow and has not been separated into skim and cream and is our first step to minimize processing.
Homo milk is homogenized ( as is 2%, and 1% ) which means that milk went through a homogenizer to break up the milk fat molecules so they become all the same size and stay suspended in the milk. Our whole milk is non-homogenized, which is our second step to minimize processing, and so the milk fat molecules stay the same size as the Cow provides it for us and because they are quite large they will float to the top. Also called cream line milk, cream top milk or non-homogenized milk. Since the cream is on the top it can be mixed back in by shaking the bottle gently.
Our milk is pasteurized at a lower temperature as regular milk. We vat pasteurize instead of HTST ( high temperature short time ) or UHT ( ultra high temperature) pasteurization. Vat pasteurization is done at 63 Celsius where as HTST is done at 73 Celsius ( and UHT at 135 Celsius) this is our third step to minimize processing.
